The menu opens with “La Hora del Aperitivo”: Iberian ensaladilla, vermouth-spiked gildas and Japanese-inspired patatas bravas that pair perfectly with a cold beer or a glass of fino. House-made croquetas follow, their béchamel studded with txuleta steak, jamón, boletus or chipirón and fried to golden perfection. For heartier appetites, the kitchen turns to slow cooking and wood smoke. Think fall-apart carrillera in red-wine cous-cous, picaña meatballs glazed with oloroso sherry, and a rack of BBQ ribs finished low-and-slow for 12 hours.
